    Peel and dice the russet potatoes into small cubes. Chop the onion and bell pepper into small pieces. Mince the garlic cloves.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they are golden and tender.

    Once the potatoes are cooked, push them to one side of the skillet. In the other side, add the remaining tablespoon of olive oil, onion, and bell pepper. Cook for about 5 minutes, until the onions are translucent.

    Add the minced garlic to the skillet and cook for an additional minute until fragrant.
