Method

Crust Preparation

  1. 1

    Make the crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.

  2. 2

    Form the crust

Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan. Make sure to pack it tightly to form a solid crust.

  3. 3

    Bake the crust

Bake in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.

Filling Preparation

  1. 4

    Mix the filling ingredients

In a large mixing bowl, combine the sweetened condensed milk, freshly squeezed key lime juice, and egg yolks. Whisk together until the mixture is smooth and well blended.

  2. 5

    Fill the crust

Pour the filling into the cooled crust, spreading it evenly with a spatula.

  3. 6

    Bake the pie

Bake the pie at 350°F (175°C) for 15-20 minutes, or until the filling is set and no longer jiggles. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours or until well chilled.

Topping Preparation

  1. 7

    Make the whipped cream

In a mixing bowl, combine the heavy whipping cream and powdered sugar. Using an electric mixer, whip the cream on medium-high speed until soft peaks form.

  2. 8

    Finish the pie

Spread the whipped cream evenly over the chilled pie and garnish with lime zest. Slice and serve.
