    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick. Let it rest for about 15 minutes.

    In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and float to the top.

    Fry the Fish

    Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

    Peel the russet potatoes and cut them into thick strips (about 1/2 inch). Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.
