Preparing the Fish

Prepare the Battering Mixture
In a medium bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika until well combined.

Add Sparkling Water
Gradually add cold sparkling water to the dry mixture, whisking until you achieve a smooth batter. Set aside.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry the Fish
Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fillet into the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy.
