Method

Prepare the Salad Base

  1. 1

    Chop the Vegetables

Wash and dry the romaine lettuce, then chop it into bite-sized pieces. Halve the cherry tomatoes. Peel the cucumber and slice it into thin rounds. Remove the seeds from the red bell pepper and chop it into small pieces. Finally, peel the carrot and julienne it or shred it.

Cook the Chicken

  1. 2

    Season the Chicken

In a bowl, mix together the olive oil, garlic powder, paprika, salt, and black pepper. Coat the chicken breasts in this mixture.

  2. 3

    Grill or Pan-Fry

Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing.

Make the Dressing

  1. 4

    Combine Ingredients

In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, and honey. Season with salt and black pepper to taste.

Assemble the Salad

  1. 5

    Combine Ingredients

In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and carrots.

  2. 6

    Add Chicken

Slice the cooked chicken breasts and add them on top of the salad.

  3. 7

    Top with Dressing

Drizzle the prepared dressing over the salad and toss gently to combine.

  4. 8

    Add Toppings

Dice the avocado and scatter it over the salad. Add crumbled feta cheese and sprinkle with chopped parsley for garnish.
