Pour the whole milk into a large pot and heat it over medium heat. Use a thermometer to monitor the temperature until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

Allow the mixture to sit undisturbed for about 10 minutes. You will see the curds and whey separate.

Using a slotted spoon, carefully scoop out the curds and place them in a bowl lined with cheese cloth. Allow excess whey to drain off.
