Preparation of Milk

    Heat the Milk

    Pour the whole milk into a large pot and heat it over medium heat. Use a thermometer to monitor the temperature until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Once the milk reaches 190°F, remove the pot from heat and slowly stir in the white vinegar or lemon juice. Stir gently for about 1 minute until curds begin to form.

Curd Separation

    Let it Sit

    Allow the mixture to sit undisturbed for about 10 minutes. You will see the curds and whey separate.

    Strain the Curds

    Using a slotted spoon, carefully scoop out the curds and place them in a bowl lined with cheese cloth. Allow excess whey to drain off.

Flavoring and Serving

    Once the curds have drained, sprinkle the salt over them and gently mix it in. Taste and adjust salt to your preference.
