Method
For the Cestas
- 1
Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, salt, and sugar. Mix well.
- 2
Incorporate the Butter
Add the cold butter, cut into small cubes, into the flour mixture. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
- 3
Add Wet Ingredients
Add the egg and cold water to the mixture. Stir until the dough just comes together. Do not overmix.
- 4
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- 5
Shape the Cestas
Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and cut into circles large enough to fit into muffin tins.
- 6
Bake the Cestas
Place the dough circles into the muffin tins, pressing them into the bottom and sides. Bake for 15-20 minutes or until golden brown. Remove from oven and let cool.
For the Filling
- 7
Cook the Filling
In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, sauté until softened, about 5 minutes.
- 8
Add Ground Beef
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.
- 9
- 10
Combine with Cheese and Cilantro
Remove from heat and stir in the shredded cheddar cheese and chopped cilantro until well combined.
Assembly and Serving
- 11
Fill the Cestas
Spoon the filling into the cooled cestas, filling them generously.
- 12
Garnish and Serve
Top each cesta with a dollop of sour cream and serve with lime wedges on the side.
