Method

Preparing the Chips

  1. 1

    Cut the Potatoes

Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 3

    Preheat Oil

In a deep pot, heat vegetable oil over medium heat until it reaches 325°F (160°C).

  4. 4

    Fry the Chips

Drain the soaked potatoes, pat them dry, and carefully add them to the hot oil. Fry in batches for about 5-7 minutes until soft but not browned. Remove and drain on paper towels.

Preparing the Fish

  1. 5

    Make the Batter

In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Slowly add the beer while whisking until the batter is smooth and thick.

  2. 6

    Heat Oil for Frying

Increase the heat of the oil to 375°F (190°C) for frying the fish.

  3. 7

    Coat the Fish

Dip each piece of fish into the batter, ensuring it is well-coated.

  4. 8

    Fry the Fish

Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Final Assembly

  1. 9

    Re-Fry the Chips

Increase the heat of the oil again to 375°F (190°C) and fry the pre-cooked chips for an additional 2-3 minutes until they are golden brown and crispy.

  2. 10

    Serve

Serve the crispy fish with the hot chips, tartar sauce, and lemon wedges on the side.
