Method

Preparing the Mushroom Base

  1. 1

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

  2. 2

    Add Garlic and Mushrooms

Stir in the minced garlic and cook for an additional minute. Then, add the wild mushrooms and thyme, cooking until the mushrooms are soft and browned, about 8-10 minutes.

  3. 3

    Add Broth

Pour in the vegetable broth, bringing the mixture to a simmer. Let it cook for about 15-20 minutes to allow the flavors to meld.

Creating the Creamy Mixture

  1. 4

    Blend the Soup

Using an immersion blender or transferring to a blender in batches, puree the soup until smooth. If using a blender, be careful with the hot liquid.

  2. 5

    Add Cream and Seasoning

Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper to taste. Heat through gently, but do not boil.

Serving

  1. 6

    Garnish and Serve

Ladle the soup into bowls, garnish with chopped parsley and a drizzle of truffle oil. Serve hot.
