Method
Tart Crust Preparation
Make the Tart Crust
In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt.
Gradually add the dry ingredients to the butter mixture and mix until combined.
Add ice water, one tablespoon at a time, until the dough comes together.
Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan.
Prick the bottom with a fork and bake for 15-20 minutes until slightly firm. Allow to cool.
Chocolate Filling Preparation
Prepare the Chocolate Filling
In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.
Remove from heat, add the chopped dark chocolate, and let sit for 5 minutes.
Stir until the chocolate is fully melted and smooth.
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until smooth.
Pour the filling into the cooled tart crust and bake for an additional 15-20 minutes, until set but still slightly jiggly in the center.
Allow the tart to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
