Method
Cake Directions
- 1
Prepare the Cake Batter
Preheat the oven to 350°F (175°C). In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- 2
Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- 3
Combine Dry Ingredients
In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
- 4
Mix Dry and Wet Ingredients
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped walnuts.
- 5
Bake the Cake
Pour the batter into a greased and floured 9-inch round cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 6
Cool the Cake
Remove from the oven and let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Coffee Crème Anglaise Directions
- 7
Heat the Cream
In a saucepan over medium heat, heat the heavy cream and granulated sugar until just simmering. Stir occasionally to dissolve the sugar.
- 8
- 9
Temper the Egg Yolks
Slowly pour a small amount of the hot cream mixture into the egg yolks, whisking constantly to temper them. Gradually add the rest of the cream mixture, whisking continuously.
- 10
Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until the sauce thickens and coats the back of a spoon (about 5-7 minutes).
- 11
Add Coffee and Vanilla
Remove from heat and stir in the espresso and vanilla extract. Let cool before serving.
Candied Walnuts Directions
- 12
Prepare the Sugar Mixture
In a saucepan, combine granulated sugar and water over medium heat. Stir until the sugar is dissolved.
- 13
Add Walnuts
Add the walnuts to the sugar mixture and cook, stirring frequently, until the mixture thickens and coats the walnuts, about 5-7 minutes.
- 14
Cool the Walnuts
Remove from heat and spread the candied walnuts on a parchment-lined baking sheet to cool completely.
