Pasta Dough

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Gradually mix the flour into the eggs with a fork until combined.

Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Truffle Cream Sauce

Prepare the Garlic
Mince the garlic cloves and set aside.

Make the Sauce
In a medium saucepan over medium heat, combine the heavy cream and minced garlic. Bring to a gentle simmer, stirring frequently.

Add Truffle Oil and Cheese
Once the cream has thickened slightly, add the truffle oil and grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth. Season with black pepper and salt to taste.
Cooking the Pasta

Roll Out the Dough
After the dough has rested, roll it out using a pasta machine or a rolling pin until it is thin. Cut the dough into your desired pasta shape (fettuccine, tagliatelle, etc.).

Cook the Pasta
In a large pot of salted boiling water, cook the pasta for 3-4 minutes or until al dente. Drain the pasta and reserve a cup of the pasta water.

Combine Pasta and Sauce
In the saucepan with the truffle cream sauce, add the cooked pasta. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
Garnish and Serve

Plate the Dish
Serve the truffle pasta in bowls. Garnish with chopped fresh parsley and shaved truffles if desired.
