Make Rhubarb Syrup
In a saucepan, combine the chopped rhubarb and sugar. Add 1 cup of water and bring to a boil over medium heat. Stir occasionally until the sugar dissolves and the rhubarb softens, about 10 minutes. Remove from heat and let it cool. Strain the mixture through a fine mesh sieve to separate the syrup from the solids. Set aside the rhubarb syrup.

Infuse the Rum
In a clean jar, combine the white rum and a handful of fresh mint leaves. Seal the jar and let it sit in a cool, dark place for at least 24 hours to allow the flavors to meld together. The longer it sits, the stronger the mint flavor will be.

Muddle the Mint
In a sturdy glass, add the fresh mint leaves. Using a muddler or the back of a spoon, gently press down on the mint leaves to release their oils. Be careful not to shred the leaves.

Combine Ingredients
To the muddled mint, add the fresh lime juice, rhubarb syrup, mint-infused white rum, and house-made rhubarb liqueur. Stir well to combine all ingredients.

Add Ice and Bubbles
Fill the glass with ice cubes. Top off the drink with club soda or sparkling water, giving it a gentle stir to incorporate the bubbles.

Garnish and Serve
