    Make the dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs.

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Avoid overmixing.

    Chill the dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Pre-bake the crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch tart pan. Trim the edges and prick the bottom with a fork. Bake for about 15 minutes or until lightly golden.

Filling Preparation

    In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the lemon verbena leaves. Cover and let steep for 15 minutes.

    Strain the infused cream to remove the lemon verbena leaves. Gradually whisk the cream into the egg yolk mixture. Add the lemon juice and vanilla extract, mixing until smooth.

    Pour the filling into the pre-baked tart crust. Bake for 25-30 minutes, or until the filling is set and slightly jiggles in the center.
