Method

Brewing the Tea

    Boil Water

    In a large pot, bring 4 cups of water to a boil.

    Steep Tea

    Once the water is boiling, remove it from heat and add the 4 black tea bags. Allow the tea to steep for 5-7 minutes.

    Add Sugar

    Remove the tea bags and stir in 1 cup of sugar until fully dissolved. Let the tea cool to room temperature.

Fermenting the Kombucha

    Combine Ingredients

    Once the tea has cooled, pour it into a clean glass jar or fermentation vessel. Add 1 cup of starter tea and gently place the SCOBY on top.

    Cover and Ferment

    Cover the jar with a clean cloth or coffee filter and secure it with a rubber band. Allow the kombucha to ferment at room temperature (around 70-85°F) for 7-14 days, tasting periodically until it reaches your desired level of fermentation.

Flavoring and Bottling

    Prepare Flavoring

    Once the kombucha is fermented to your liking, remove the SCOBY and set it aside. In a bowl, mix 2 tbs of grated ginger, 2 tbs of lemon juice, and 1 tbs of honey (if using).

    Bottle Kombucha

    Combine the flavored mixture with the fermented kombucha. Use a funnel to pour the kombucha into bottles, leaving about an inch of headspace at the top.

    Secondary Fermentation

    Seal the bottles tightly and let them sit at room temperature for an additional 3-7 days for secondary fermentation. This will create natural carbonation.

    Refrigerate and Enjoy

    Once carbonated, refrigerate the bottles to stop the fermentation process. Serve chilled and enjoy your Lazy Days Kombucha!
