Method

Preparation of the Marinade

  1. 1

    Make the Marinade

In a bowl, combine olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, and black pepper. Whisk together until well mixed.

Marinating the Salmon

  1. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring it is well coated. Cover or seal and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

While the salmon is marinating, prepare the vegetables. Trim the asparagus, slice the bell pepper and zucchini into strips, and place all the vegetables in a bowl. Drizzle with olive oil, salt, and black pepper. Toss to coat.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 5

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

  3. 6

    Grill the Vegetables

Place the prepared vegetables on the grill in a grill basket or directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the grilled vegetables on a plate.
