Preparing the Oysters

Clean the Oysters
Rinse the oysters under cold running water, scrubbing the shells with a brush to remove any dirt and grit. Place them on a clean towel to dry.

Prepare the Breading
In a shallow bowl, mix together the all-purpose flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk until well combined.

Bread the Oysters
Dip each oyster into the egg mixture, then dredge in the flour mixture, ensuring they are evenly coated.

Blend the Aioli
In a blender, combine the cooked bacon (chopped), mayonnaise, garlic (minced), lemon juice, salt, and black pepper. Blend until smooth and creamy.
Preparing the Scallion Jam

Cook the Scallions
In a small saucepan, heat the olive oil over medium heat. Add chopped scallions and sauté for 2-3 minutes until soft.

Add Sugar and Sauce
Stir in the brown sugar, soy sauce, and rice vinegar. Cook for an additional 5 minutes, stirring frequently, until the mixture thickens into a jam-like consistency.
Frying the Oysters

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until shimmering.

Fry the Oysters
Carefully place the breaded oysters in the hot oil in batches, frying for about 2-3 minutes on each side until golden brown and crispy.

Drain and Serve
Remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with bacon aioli and scallion jam.
