Soup Preparation

Prepare the Ingredients
Clean the foraged mushrooms thoroughly and chop them into bite-sized pieces. Finely dice the onion and mince the garlic cloves.

Add Broth and Seasonings
Pour in the vegetable broth and stir in the salt, black pepper, and fresh thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

Blend the Soup
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

Finish with Cream
Stir in the heavy cream and heat the soup over low heat until warmed through. Adjust seasoning with additional salt and pepper if needed.

Prepare the Herbs
Wash and dry the fresh herbs thoroughly. Chop them coarsely.

Make the Herb Oil
In a blender or food processor, combine the chopped herbs, olive oil, and salt. Blend until smooth and well combined. Strain the mixture through a fine mesh sieve or cheesecloth for a smoother oil, if desired.
