Prepare the Mushroom

Sauté the Mushrooms
In a large skillet, melt the butter over medium heat. Add the foraged mushrooms and sauté for about 5-7 minutes until they are tender and golden brown. Season with salt and pepper. Remove from heat and set aside.

Chop the Parsley
Finely chop the fresh parsley and set aside for garnish.
Cook the Risotto

Heat the Broth
In a medium saucepan, heat the vegetable broth over low heat. Keep it warm throughout the cooking process.

Cook the Arborio Rice
Add the Arborio rice to the pot and toast for 2-3 minutes, stirring constantly until the rice is lightly toasted.

Add the Wine
Pour in the white wine and let it simmer, stirring continuously, until the wine is almost completely absorbed by the rice.

Incorporate the Broth
Slowly add the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente.

Finish the Risotto
Once the rice is cooked, remove the pot from heat. Stir in the sautéed mushrooms and Parmesan cheese. Season with salt and black pepper to taste.
