Herb Infusion Preparation

    Prepare the Herbs

    In a clean jar, combine the fresh mint leaves, lemon balm leaves, and elderflower blossoms. Use a muddler or the back of a spoon to gently bruise the herbs, releasing their aromatic oils.

    Infuse the Herbs

    Pour 1 cup of boiling water over the bruised herbs in the jar. Cover the jar and let it steep for 15-20 minutes, allowing the flavors to meld together.

    Strain the Infusion

    After steeping, strain the infusion through a fine mesh sieve or cheesecloth into a clean measuring cup, discarding the solids. Set the herb infusion aside to cool.

Cocktail Assembly

    Mix the Cocktail

    In a cocktail shaker, combine 2 oz of gin, 1 oz of fresh lemon juice, and 0.5 oz of simple syrup. Add 1 oz of the cooled herb infusion and fill the shaker with ice.

    Shake Well

    Secure the lid on the shaker and shake vigorously for about 15 seconds until well chilled.

    Strain and Serve

    Strain the mixture into a highball glass filled with ice. Top with 4 oz of soda water for a refreshing fizz.

Garnishing
