Prepare the Duck
In a large bowl, combine the duck legs with salt, black peppercorns, garlic cloves (smashed), thyme, and bay leaves. Cover and refrigerate for at least 24 hours, preferably 48 hours.

Cook the Duck
Preheat the oven to 225°F (107°C). Rinse the duck legs under cold water to remove excess salt and spices. Pat them dry with paper towels. In a large oven-proof pot or Dutch oven, melt the duck fat over low heat. Submerge the duck legs in the warm fat and cover. Cook in the oven for about 2 to 3 hours, until the meat is tender and easily pulls away from the bone.

Crisp the Duck
Remove the duck legs from the fat and let them cool slightly. If desired, heat a skillet over medium-high heat and sear the duck legs skin-side down until the skin is crispy and browned. Set aside.

Form the Gnocchi
Divide the dough into sections. Roll each section into a long rope about 1 inch thick. Cut into 1-inch pieces. Use a fork to press down on each piece to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Cabbage and Apples

Prepare the Vegetables
Slice the green cabbage and core and slice the apple into thin pieces.

Cook the Cabbage and Apples
In a large skillet, melt the butter over medium heat. Add the cabbage and apple slices, stirring to combine. Cook for about 5-7 minutes until the cabbage is wilted and the apples are tender.

Finish the Dish
Add apple cider vinegar, and season with salt and pepper to taste. Stir to combine and cook for an additional 2 minutes.
