Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk the Eggs
In a separate bowl, separate the egg yolks from the egg whites. Whisk the egg yolks with granulated sugar until pale and creamy.

Combine Mixtures
Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring constantly until well combined.

Whip the Cream
In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until combined.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.

Prepare the Whipped Cream
In a medium bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.

Serve
Once the mousse has set, top each serving with a dollop of the whipped cream. Optionally, garnish with chocolate shavings or berries.
