Peel and chop the Russet potatoes into quarters. Place them in a large pot and cover with water. Bring to a boil over high heat and cook until fork-tender, about 15-20 minutes.

Once cooked, drain the potatoes and allow them to cool slightly. Mash the potatoes in a large bowl until smooth.

To the mashed potatoes, add truffle oil, salt, black pepper, garlic powder, onion powder, cornstarch, grated Parmesan cheese, and eggs. Mix until well combined and a dough forms.

Using your hands, take a small amount of the potato mixture and shape it into a small cylinder or oval, about 1 inch in diameter. Place the shaped tots on a parchment-lined baking sheet.

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
