Dough Preparation
Make the Dough
In a large bowl, mix the all-purpose flour and salt together. Create a well in the center and add the eggs and olive oil. Gradually combine the flour with the wet ingredients until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
Filling Preparation
Prepare the Spinach
In a pot of boiling salted water, blanch the fresh spinach for 1-2 minutes until wilted. Drain and rinse under cold water to stop cooking. Squeeze out excess water and chop finely.
Mix the Filling
In a bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, nutmeg, salt, and black pepper. Mix well until fully combined.
Ravioli Assembly
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out one piece at a time into thin sheets, about 1/16 inch thick, using a pasta machine or rolling pin.
Form the Ravioli
Place teaspoons of filling about 2 inches apart on one sheet of dough. Moisten the edges with water, then place another sheet of dough on top. Press down around each filling to seal, ensuring no air pockets remain.
Cut the Ravioli
Use a knife or ravioli cutter to cut between the fillings, creating individual raviolis. Repeat with remaining dough and filling.
Lobster Crème Sauce
Sauté Aromatics
In a large skillet over medium heat, melt the butter. Add the minced garlic and chopped shallot, cooking until fragrant and translucent, about 3-4 minutes.
Add Wine and Cream
Pour in the white wine and simmer for 2-3 minutes. Then add the heavy cream, stirring well to combine, and let it simmer for another 5 minutes until slightly thickened.
Finish the Sauce
Stir in the chopped lobster meat, salt, and black pepper. Cook for an additional 2-3 minutes until heated through. Sprinkle with fresh parsley before serving.
Cooking the Ravioli
Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 4-5 minutes, or until they float to the surface.
Serve
Using a slotted spoon, remove the ravioli and plate them. Top with the lobster crème sauce and garnish with additional parsley if desired.
