Cook the Pasta

In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Prepare the Chicken

While the pasta is cooking, season the chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium heat, then add the chicken breasts. Cook for about 6-7 minutes on each side or until the chicken is fully cooked and golden brown. Remove from skillet and let rest.

Sauté the Vegetables

In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.

Make the Sauce

Pour in the Chardonnay wine and let it simmer for 2-3 minutes to reduce slightly. Then, stir in the heavy cream, bring to a gentle simmer, and season with salt and pepper.

Combine Everything

Add the spinach and cooked penne pasta to the skillet, stirring to coat evenly in the sauce. Slice the chicken breasts and lay them on top of the pasta.

Finish with Cheese

Sprinkle the grated Parmesan cheese over the top and garnish with fresh parsley. Allow it to heat through for a minute before serving.
