Cook the Pasta
Bring a large pot of salted water to a boil. Add the Cresta Di Gallo pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the crushed tomatoes and bring to a simmer.

Add Mezcal and Cream
Once the sauce is simmering, pour in the mezcal and heavy cream. Stir well to combine and let it simmer for another 5-7 minutes until slightly thickened.

Combine Pasta and Sauce
Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly with the sauce. If needed, adjust the seasoning with salt and black pepper.

Plate the pasta and top with grated Parmesan cheese and chopped fresh parsley. Enjoy your Cresta Di Gallo!
