Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

Make the cheesecake filling
In another large mixing bowl, beat the cream cheese with granulated sugar until smooth. Add in sour cream and vanilla extract, mixing until fully incorporated. Add eggs one at a time, mixing just until combined.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set but slightly jiggly.

Cool and chill
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour. Then, refrigerate for at least 4 hours or overnight to fully set.

Prepare the strawberries
Wash and slice fresh strawberries. Once the cheesecake is chilled and set, top it with the sliced strawberries before serving.
