Prepare the Crostini
Preheat the oven to 180°C (350°F). Slice the baguette into thin pieces and arrange them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for about 10-12 minutes until golden and crispy.

Prepare the Provolone
While the crostini are baking, slice the provolone cheese into thick rounds. Arrange the cheese on a baking dish.

Add Figs and Herbs
Chop the dried figs, fresh thyme, and rosemary. Sprinkle the figs and herbs over the provolone cheese. Drizzle with a little more olive oil and season with salt and pepper.

Bake the Cheese
Place the baking dish with the provolone in the oven and bake for about 15-20 minutes until the cheese is melted and bubbly.

Prepare Mezcal Fire
In a small pan, carefully heat the mezcal until warm but not boiling. If desired, carefully ignite the mezcal with a long lighter to create a flame (exercise caution).

Serve
Remove the baked provolone from the oven, and serve immediately with the crostini. Pour the mezcal fire over the cheese just before serving for a dramatic presentation.
