Method

Prepare the Salad Base

    Trim and Halve Brussels Sprouts

    Rinse the Brussels sprouts under cold water. Trim the ends and remove any discolored outer leaves. Cut each Brussels sprout in half lengthwise.

    Sauté Brussels Sprouts

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the halved Brussels sprouts cut side down. Cook for 5-7 minutes until they are golden brown and tender.

    Add Green Olives

    Once the Brussels sprouts are cooked, add the sliced green olives to the skillet. Stir gently to combine and heat through for another 2 minutes.

Make the Vegan Caesar Dressing

    Combine Ingredients

    In a bowl, whisk together tahini, nutritional yeast, minced garlic, lemon juice, Dijon mustard, olive oil, salt, and black pepper until smooth. Adjust seasoning to taste.

Prepare the Garlic Breadcrumbs

    Mix Breadcrumbs

    In a separate bowl, combine the bread crumbs, garlic powder, and olive oil. Mix until the breadcrumbs are evenly coated.

    Toast Breadcrumbs

    In a skillet over medium heat, add the breadcrumb mixture. Toast the breadcrumbs for about 5-7 minutes, stirring frequently until they are golden brown. Season with salt to taste.

Assemble the Salad

    Combine Salad

    In a large serving bowl, combine the sautéed Brussels sprouts and green olives. Drizzle the vegan Caesar dressing over the top and toss until well coated.

    Top with Parmesan and Breadcrumbs

    Sprinkle the grated Parmesan cheese over the salad, followed by the toasted garlic breadcrumbs. Serve warm.
