Method
Brewing the Kombucha Base
Boil Water
In a large pot, bring 4 cups of water to a boil.
Steep Tea
Once boiling, remove from heat and add 4 black tea bags. Allow to steep for 10-15 minutes.
Dissolve Sugar
Remove the tea bags and stir in 1 cup of sugar until completely dissolved.
Cool the Mixture
Let the sweetened tea cool to room temperature.
Cover and Ferment
Cover the jar with a clean cloth or coffee filter and secure it with a rubber band. Let it ferment in a warm, dark place for 7-14 days.
Flavoring (Optional)
Prepare Flavorings
If you wish to flavor your kombucha, prepare the flavoring ingredients such as grated ginger, fresh fruit, or herbs.
Add Flavorings
After the fermentation period, remove the SCOBY and set aside. Pour the kombucha into bottles, leaving some space at the top. Add your desired flavorings to each bottle.
Second Fermentation
Seal the bottles and let them ferment at room temperature for an additional 3-5 days to develop the flavors and carbonation.
Bottling and Serving
Refrigerate
Once the second fermentation is complete, refrigerate the bottles to stop the fermentation process.
Serve
Serve your homemade Kombucha chilled. Enjoy it plain or with additional flavorings if desired.
