Date Caramel

Method

Date Caramel

  1. 1

    Prepare the Dates

Soak the pitted Medjool dates in warm water for about 10-15 minutes to soften them.

  2. 2

    Blend the Caramel

In a blender, combine the soaked dates (drained), 1 cup of fresh water, and 1 tsp of Himalayan pink salt. Blend until smooth and creamy. Adjust the consistency by adding more water if necessary.

  3. 3

    Taste and Adjust

Taste the caramel and add more salt to your liking. Blend again to mix.

Pistachio Milk

  1. 4

    Soak the Pistachios

Soak the raw pistachios in water for at least 4 hours or overnight to soften. Drain and rinse before using.

  2. 5

    Blend the Milk

In a blender, add the soaked pistachios and 4 cups of fresh water. Blend on high speed for about 1-2 minutes until smooth and creamy.

  3. 6

    Strain the Milk

Using a nut milk bag or fine mesh strainer, strain the mixture into a bowl or pitcher to separate the milk from the pulp.

  4. 7

    Flavor the Milk

Add 1 tsp of vanilla extract and sweetener to taste. Stir well and adjust sweetness as needed.
