Roast the Pears
Preheat your oven to 400°F (200°C). Slice the Arkansas pears into thin wedges and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with sea salt. Roast in the oven for about 15-20 minutes until they are tender and slightly caramelized.

Caramelize the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté thinly sliced onions until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Add the Toppings
On each flatbread, evenly distribute the mozzarella cheese, followed by the roasted pear slices, caramelized onions, and dollops of goat cheese.

Bake the Flatbreads
Place the assembled flatbreads in the oven at 400°F (200°C) for about 10-12 minutes or until the cheese is melted and bubbly.

Remove the flatbreads from the oven and top with fresh arugula. Drizzle with balsamic glaze to taste before slicing and serving.
