    Mix Dry Ingredients

    In a large bowl, combine all-purpose flour, granulated sugar, and salt. Mix well.

    Incorporate Butter

    Add the chilled and cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Raspberry Filling Preparation

    Cook the Filling

    In a medium saucepan, combine fresh raspberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring gently until the raspberries break down and the mixture thickens, about 5-7 minutes.

    Remove from heat and let the raspberry filling cool completely before using.

Assembly and Baking
