Omelette Preparation

    Clean and slice the mushroom medley into thin strips.

    In a skillet, heat the butter or olive oil over medium heat.

    Add the sliced mushrooms to the skillet and sauté for about 5-7 minutes until they are tender and browned. Season with salt and black pepper.

    In a bowl, beat the fresh farm eggs and add salt and black pepper.

    Once the mushrooms are cooked, push them to the side of the skillet and pour the beaten eggs into the other side.

    Let the eggs cook for 2-3 minutes, gently stirring the edges to allow uncooked egg to flow to the edges.

    Once the eggs are nearly set, crumble the goat cheese and sprinkle the grated Gruyere cheese over half of the omelette.

    Fold the omelette in half and cook for another minute until the cheese is melted.

    Carefully slide the omelette onto a plate.

Mixed Greens Preparation

    In a large bowl, combine the mixed greens.

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

    Drizzle the dressing over the mixed greens and toss gently to combine.

    Serve the tossed mixed greens alongside the omelette.
