Prepare the Gelatin
In a small bowl, combine the unflavored gelatin with 1/2 cup of water and let it sit for about 5 minutes to bloom.

Cook Sugar Mixture
In a saucepan, combine the granulated sugar, light corn syrup, and remaining water (1/2 cup). Bring to a boil over medium heat, stirring until the sugar dissolves.

Heat to Soft Ball Stage
Continue to cook the sugar mixture without stirring until it reaches the soft ball stage (around 240°F or 115°C).

Combine Gelatin and Sugar Mixture
Remove from heat and carefully stir in the bloomed gelatin until fully dissolved. Add the vanilla extract.

Whip the Mixture
Pour the mixture into a mixing bowl and whip on high speed for about 10-15 minutes until it becomes thick and fluffy.

Set the Marshmallow
Spread the marshmallow mixture into a greased baking dish and let it set for at least 4 hours or overnight.

Cut and Toast
Once set, cut the marshmallow into squares and toast them lightly using a kitchen torch or broiler before serving on top of the cocoa.
