Beignet Dough Preparation

Activate Yeast
In a small bowl, combine warm milk (not hot) and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, and salt.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Frying Beignets

Prepare Oil
In a deep pot, heat vegetable oil to 350°F (175°C).

Shape Beignets
Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into squares or rectangles.

Fry Beignets
Carefully drop the dough pieces into the hot oil, frying in batches for about 2-3 minutes on each side, or until golden brown.

Remove beignets with a slotted spoon and place them on paper towels to drain excess oil.
