Sweet Potato Soup

Cheese Sandwich

    Prepare the Cheese

    Grate the Fontina and Cheddar cheeses and combine them in a bowl. Set aside.

    Butter the Bread

    Spread unsalted butter evenly on one side of each slice of brioche bread.

    Assemble the Sandwich

    Place one slice of bread butter-side down in a skillet over medium heat. Add a layer of grated cheese, followed by a spoonful of apple relish, and then top with another slice of bread, butter-side up.

    Grill the Sandwich

    Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden brown.

    Serve

    Once grilled to perfection, remove the sandwich from the skillet and cut it in half. Keep warm while preparing the soup.

Sweet Potato Soup

    Prepare the Vegetables

    Peel and dice the sweet potatoes into small cubes. Chop the onion and mince the garlic.

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant, about 3-5 minutes.

    Cook the Sweet Potatoes

    Add the sweet potatoes to the pot and stir to combine. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If using a regular blender, carefully transfer the soup in batches and blend until creamy.

    Season the Soup

    Return the blended soup to the pot and season with salt, black pepper, and a pinch of nutmeg. Stir well and heat through.

    Ladle the sweet potato soup into bowls and serve hot alongside the gourmet grilled cheese.
