Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a large bowl, whisk together gluten-free all-purpose flour, baking powder, baking soda, salt, and xanthan gum until well combined.

Mix Wet Ingredients
In another bowl, combine warm water, olive oil, honey, apple cider vinegar, and eggs. Whisk until smooth.

Combine Ingredients
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. The batter will be thick.
Baking

Prepare the Pan
Grease a 9x5 inch loaf pan with a little olive oil or line it with parchment paper.

Transfer Batter
Spoon the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake
Bake in the preheated oven for 45-50 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.

Cool the Bread
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
