Veggie Burger Patty Preparation

    Mix Ingredients

    In a large bowl, combine the cooked quinoa, mashed black beans, oats, grated carrot, chopped bell pepper, chopped onion, minced garlic, cumin, salt, black pepper, and egg. Mix until well combined.

    Form Patties

    Shape the mixture into burger patties, about 1/2 inch thick. You should get about 4 patties.

    Cook Patties

    Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until browned and heated through.

Caramelized Onions

    Caramelize Onions

    In a separate skillet, melt butter or heat olive oil over medium-low heat. Add sliced onions and cook, stirring occasionally, for about 15-20 minutes, or until they are golden brown and caramelized.

French Fries Preparation

    Prepare Fries

    Preheat the oven to 425°F (220°C). Toss the cut potatoes in olive oil, salt, and black pepper.

    Bake Fries

    Spread the potatoes on a baking sheet in a single layer. Bake for about 30 minutes, flipping halfway through, until golden and crispy.

Assembly

    Assemble Burger

    Spread Dijon mustard on the bottom half of the brioche bun. Place the cooked veggie burger patty on top, followed by crumbled goat cheese, arugula, and caramelized onions. Drizzle truffle oil over the top and close the sandwich with the top half of the bun.

    Serve the garden burger with a side of baked french fries and apple relish on the side.
