Prepare the Pears
Preheat your oven to 400°F (200°C). Slice the Arkansas pears in half, remove the core and slice them into thin wedges.

Roast the Pears
Place the pear slices on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and sprinkle with sea salt. Roast in the oven for 15-20 minutes or until they are tender and slightly caramelized.

Caramelize the Onions
While the pears are roasting, slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of sea salt. Cook, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized.

Bake the Flatbread
Place the assembled flatbread in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

Finish with Arugula and Balsamic Glaze
Remove the flatbread from the oven and immediately top it with fresh arugula. Drizzle the balsamic glaze over the top before slicing and serving.
