Fried Oyster Mushrooms

Chickpea Aioli

Turmeric Ginger Honey

Method

Fried Oyster Mushrooms

  1. 1

    Prepare the Mushrooms

Clean the oyster mushrooms by wiping them with a damp cloth. Trim off any tough stems.

  2. 2

    Make the Batter

In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Gradually add water while whisking until you achieve a smooth batter.

  3. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 180°C (350°F).

  4. 4

    Fry the Mushrooms

Dip each mushroom into the batter, allowing excess to drip off. Carefully lower them into the hot oil. Fry in batches for about 3-4 minutes until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Chickpea Aioli

  1. 5

    Blend Ingredients

In a food processor, combine the drained chickpeas, minced garlic, lemon juice, tahini, olive oil, salt, and water. Blend until smooth and creamy.

  2. 6

    Adjust Consistency

If the aioli is too thick, add a little more water, one teaspoon at a time, until you reach the desired consistency.

Turmeric Ginger Honey

  1. 7

    Mix Ingredients

In a small bowl, combine honey, ground turmeric, and grated ginger. Stir well until fully combined.
