Quesadilla Preparation

Prepare Cheese
Grate the organic cheddar cheese using a cheese grater until you have about 2 cups.

Assemble Quesadilla
Take one flour tortilla and spread a generous amount of grated cheddar cheese over half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas.

Cook Quesadilla
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place the first quesadilla in the skillet and cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Remove from the skillet and keep warm. Repeat with the remaining quesadillas, adding more oil as needed.

Sprinkle a little salt over the quesadillas while they are still warm for added flavor.

Wash the strawberries and blueberries under cold water. Remove the green tops from the strawberries and slice them in half. Peel the banana and slice it into rounds.
