    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Vegetables

    Wash and cut the cauliflower into florets. Peel and cube the butternut squash into small pieces.

Cooking the Vegetables

    Boil the Cauliflower and Butternut Squash

    In a large pot, bring water to a boil. Add the cauliflower florets and butternut squash cubes. Cook for 8-10 minutes until tender. Drain and set aside.

Making the Mornay Sauce

    Make a Roux

    In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.

    Add Milk

    Slowly pour in the milk while whisking vigorously to avoid lumps. Continue cooking until the sauce thickens, about 5 minutes.

    Add Cheese and Seasoning

    Remove from heat and stir in the cheddar, parmesan, and fontina cheeses until melted. Season with salt, black pepper, and nutmeg.

Combine and Bake

    Combine Vegetables and Sauce

    In a large mixing bowl, combine the cooked cauliflower and butternut squash with the mornay sauce. Mix well to coat the vegetables.

    Prepare for Baking

    Transfer the mixture into a greased baking dish. Top with breadcrumbs, additional parmesan, and chopped parsley.

    Bake

    Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and bubbly.

    Remove from the oven and let it cool for a few minutes before serving. Enjoy your baked cauliflower!
