    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. This removes excess starch and helps the rice cook evenly.

    Chop the Vegetables

    Dice the bell pepper, onion, and carrot into small pieces. Set aside the green peas.

    Prepare the Protein (if using)

    If using chicken, dice the chicken breast into small cubes. If using chickpeas, rinse and drain them if using canned.

    Cook the Rice

    In a medium pot, combine the rinsed rice, 2 cups of water, 1 tablespoon of olive oil, and 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, bell pepper, and carrot. Sauté for about 5-7 minutes, or until the vegetables are tender.

    Add the Green Peas and Spices

    Stir in the green peas, cumin, black pepper, turmeric, and paprika into the sautéed vegetables. Cook for an additional 2-3 minutes.

    Cook the Protein (if using)

    If using chicken, add the diced chicken breast to the skillet and cook until fully cooked, about 5-7 minutes. If using chickpeas, add them to the vegetable mixture and heat through.

    Combine Rice and Vegetables

    Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetables and protein. Stir well to combine all ingredients and heat through for another 2-3 minutes.
