Method

Preparing the Grilled Barramundi

  1. 1

    Marinate the Fish

In a bowl, combine the olive oil, salt, black pepper, and lemon juice. Add the barramundi fillets and coat them evenly with the marinade. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Barramundi

Place the marinated barramundi fillets on the grill. Cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Making the Lemon Butter Sauce

  1. 4

    Melt the Butter

In a small saucepan over medium heat, melt the unsalted butter until it is bubbly but not browned.

  2. 5

    Add Garlic

Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.

  3. 6

    Finish the Sauce

Stir in the fresh lemon juice and chopped parsley. Season with salt and black pepper to taste. Remove from heat and set aside.

Preparing the Seasonal Vegetables

  1. 7

    Sauté the Vegetables

In a large skillet over medium heat, add olive oil. Once hot, add the sliced zucchini, bell peppers, and carrots. Sauté for about 5-7 minutes or until the vegetables are tender yet crisp.

  2. 8

    Season the Vegetables

Season the sautéed vegetables with salt and black pepper to taste. Stir well to combine, then remove from heat.

Serving

  1. 9

    Plate the Dish

On a serving plate, place a grilled barramundi fillet, top it with the lemon butter sauce, and serve alongside the sautéed seasonal vegetables.
