Preparing the Fish

Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water until you have a smooth batter.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat the Fish
Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing any excess to drip off.

Fry the Fish
Carefully drop the battered fish into the hot oil, frying in batches if necessary. Cook for 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick strips.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fries
Remove the fries from the water, pat them dry, and fry them in the hot oil for 5-7 minutes until golden brown and crispy. Drain on paper towels and sprinkle with salt.

Combine Ingredients
In a small bowl, mix together the mayonnaise, finely chopped dill pickles, capers, lemon juice, salt, and pepper. Adjust seasoning to taste.
