Method
Calamari Preparation
- 1
Clean the Calamari
Rinse the fresh calamari under cold water. Remove the heads and innards, and slice the bodies into rings about 1/2 inch thick.
- 2
Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
- 3
Soak the Calamari
Pour the buttermilk into a separate bowl. Dip the calamari rings into the buttermilk, ensuring they are fully coated.
- 4
Coat the Calamari
After soaking, take the calamari rings out of the buttermilk and dredge them in the flour mixture until fully coated. Shake off any excess flour.
- 5
- 6
Fry the Calamari
Carefully add the coated calamari rings to the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Dipping Sauce Preparation
- 7
Mix the Sauce
In a small bowl, combine the mayonnaise, ketchup, lemon juice, Worcestershire sauce, and hot sauce. Stir until well blended.
- 8
Serve
Transfer the crispy calamari to a serving platter and serve hot with the tangy dipping sauce on the side.
