Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half lengthwise.

Toss with Olive Oil
In a large bowl, toss the halved Brussels sprouts with olive oil until evenly coated.

Roast Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until crispy and golden brown, tossing halfway through for even cooking.

Prepare Sauce
While the Brussels sprouts are roasting, in a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, and red pepper flakes until well combined.

Combine and Serve
Once the Brussels sprouts are done roasting, remove them from the oven and drizzle the prepared sauce over them. Toss gently to coat. Sprinkle with sesame seeds before serving.
