Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour the melted butter into the mixture and stir until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and continue to beat until well combined. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, sift in the all-purpose flour and mix until just combined.

Bake the Cheesecake
Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set and a slight jiggle remains. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking. Remove from the oven and let cool completely at room temperature. Refrigerate for at least 4 hours or overnight.

Prepare the Coulis
In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 10-15 minutes. Remove from heat and let cool slightly. Blend until smooth and strain if desired to remove seeds.
