Calamari Preparation

    Prepare the Calamari

    Rinse the cleaned calamari under cold water and pat dry with paper towels. Ensure that the calamari rings are dry to achieve a crispy coating.

    Create the Coating Mixture

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well until all the dry ingredients are evenly distributed.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, ensuring they are fully coated. Shake off any excess flour and place the coated calamari on a plate.

    Heat the Oil

    In a deep frying pan or pot, heat the olive oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small piece of the coating mixture into the oil; it should sizzle and float.

    Fry the Calamari

    Working in batches, carefully add the coated calamari rings to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.

Aioli Preparation

    Mix the Aioli

    In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir until well combined. Season with salt and black pepper to taste.

    Serve

    Transfer the fried calamari to a serving platter. Serve hot with the aioli on the side for dipping.
